Merry Christmas to all!

We wanted to wish everyone happy holidays! My whole family was together for Christmas tonight and we are are blessed to have had dinner together, exchanged gifts and family fun!
Angie and I and our families are also truly thankful for our church, our pastor, and the many friends we have made. We have a praise band that is out of this world for the ministry they provide, which is the gift of song and instrumental talents.

5 days til Christmas...

Can you believe it? Our house has been crazy...but productive. I was able to work on a gingerbread house with my youngest daughter, got my wrapping just about finished as well as picking up last minute gifts. Enjoy the season!

It has been awhile since we have posted our weekly menu. I have been faithful about posting mine on my frig from August til present. I know there are many of you with turkey leftovers! We made turkey noodle soup today! I have to admit, we are kinda making alot of crockpot meals this week that do not include turkey.

Monday - baked pork chops, roasted potatoes and broccoli
Tuesday - homemade veggie soup, sugar free jello topped with lite cool whip
Wednesday - spaghetti and garlic bread

Cleaning on a Budget

We have $1 solutions!
Baking Soda (16 ozs), you can deodorize carpets by sprinkling with baking soda and leaving on overnight, vacuum in the morning.
Put a little baking soda on a sponge to wipe down your bathroom sink and tub.
Freshen laundry by adding 1/4 cup to the rinse cycle.
White Vinegar, you can prevent mildew, wipe your fridge with a 50/50 water-vinegar solution and clean windows with that same solution. Make it in a spray bottle.
Brighten whites by adding 1/2 cup to the rinse cycle.
Lemon, purify your microwave. Warm a heat resistant bowl filled with water and a few slices of lemon for 30 seconds.
Remove stains, apply juice to white and colarfast garments, then let them dry in the sun.

Homemade Croutons

This is something we have been wanting to do. Our little ones love to just munch on croutons. Homemade croutons are also a great way to add flavor to salads. Start with day old bread, and cut it into uniform cubes. Drizzle the cubes with olive oil or you can coat them with cooking spray. Bake until golden and crisp. You can store in an air tight container.

Roasted Pumpkin Seeds

Preheat oven to 450 degrees. Scoop out the inside of a pumpkin, separate the seeds from the stringy core and rinse seeds.
In a small saucepan, add seeds and salt to water. Bring to boil, simmer for 10 minutes and remove from heat and drain.
Spread 1 Tbsp. of olive oil over cookie sheet, spread seeds in one layer and bake on top rack until they begin to brown. (approx. 10 min.)

Grocery Time Savers

A few tips to making shopping easier.
Keep inventory of your most used pantry items. Use a dry erase board and put an X next to an item when you use the last. A magnetic frig list will do the trick also. As you run out of an item, jot it on your list.
Shop during off hours. My favorite time is early mornings. Mostly avoid weekday evenings and weekend afternoons.
When unpacking items, group according to where they are located in your home. (fridge, freezer, pantry)

A great way for your child to connect with adults and kids in church is through Sunday school. There are alot of volunteers who spend their time preparing for the Sunday school lesson. We teach our kids healthy haibits such as washing hands, saying please and thank you and to do homework. Teach them the to develop a christian fellowship of their own.

Corn Fritters

1 pouch cornbread mix 6.5 oz.
1 1/2 cups corn
1 large egg
1/2 cup milk
1 Tbsp. vegetable oil

In a medium bowl, combine cornbread mix, corn, egg and milk. Let mixture stand 5 minutes.
Pour the oil into a large nonstick skillet and heat over medium high heat. Drop heaping Tbsps. of batter into hot oil and cook 1 to 1 1/2 minute on each side.
Serve warm or at room temperature. Try topping with honey or maple syrup. These make a wonderful breakfast and a great anytime snack.

Natural Weed Killer

Take white vinegar and put in a spray bottle and you are all set. You can spray all month for just under $3.00 plus no dangers for your children or pets!

Pinto and Black Bean Salad

1 cup pinto beans drained and rinsed
1 cup black beans drained and rinsed
1/2 cup red bell pepper,diced
1/2 cup green onion,minced
1/4 tsp cayenne pepper
1 tbsp red wine vinegar
1 tbsp of lemon juice
2 tbsp cilantro, minced

Combine all ingredients and refrigerate for one hour, prior to serving. Serves 4

Grace Filled Love, Part 2

The things we can do as a family to keep our family bonds strong are many. The first is to Gather. Spend time together, whether it be playing a game, tossing baseball, cooking, etc. If you have older children, try to eat either breakfast or dinner together, give the kids a ride to school and keep communication open. The second is to remember your call. You are the Light of the world. (Read in John 17:23, Matthew 5:14) Third, practice the Golden Rule...Treat others the way you want to be treated. Love the way you want to be loved. Serve one another and refer to Gal 5:14 Love your neighbor as yourself.

Grace Filled Love

I was reflecting back to March when I was reading a book about grace along with a bible study group at church. There are so many families each dealing with their own problems and some may even feel their family is falling apart. This could be from job loss, a death, the economy in general, problems in your marriage, etc.
There are 3 things you can do as an individual to work thru. The first is to just Breathe! We are told in the book of John...In this world you will have trouble, but take heart! I have overcome the world. The second is to pray. Every family stuggles with something. The third is to forgive. Just let go.
I will bring part two of my reflections tomorrow. This will be how you can work thru as a family.

Garden Tips/Composting

Ok, so you have your seeds and plants in the ground , now let's talk about how composting can help your garden and in return save you money.

Now,you can buy a simple container to keep on your counter top for your daily composting needs. These can be bought for under $30.00 at most stores like Walmart, Target, Lowes, ect.

You will compost items such as fruit peels vegetable peels, coffee grounds, including the filter.

The container will need to be emptied and put into your larger composter that you will keep outside. An old barrel, a new plastic trash can , either will do. Now, to start, add 20 pounds of soil. Add to your composter as often as needed and you will want to turn the compost every 2 weeks. Go to a fishing supply shop and buy a container of worms and add those as well.

I can not say enough for coffee grounds, your worms will love them and they will keep slugs at bay as well.

How deep should your compost be?
I suggest 2 to 4 pounds per square foot. If you read most articles this is alot but I have found this will give you fantastic yields, more than enough to share!

Mothers Day

What a great "holiday" we get to share with our Mothers, Sisters, Grandmothers, Aunts, our best friends, and if you are lucky enough your best friends are your family.

At times we take for granted those most important in our lives. We forget Thank you's, we don't take time to sit down and talk when we pick the kids up from Grandma's, when our sisters bring breakfast when we are sick, we forget that it took time away from her own family, we complain how crazy our kids are making us to the best friend who has dreamed of having children for years.

You know,the best things in life are free, go visit your Mom, call an old friend, visit the nursing home where lots of Moms need TLC.


For so many of us have lost that special lady in our own lives, take this day to just sit back and remember the times you spent together, maybe pass on a few stories with your own children, use that old recipe that is a family tradtion, start your own tradtions.

This post is dedicated to our Grandmother Irene,better known as Nanny. Truly missed but never forgotten.

Tips for Gardening Part 2

If you are looking at small square footage for your garden, here are a few tips before planting.

1. Pick a location that is close to your house,so it easy to pick from and convenient to take care of.

2. Pick a place that will not "flood out" in a heavy rain.

3. Make sure your garden will get at least 7 hours of sun light a day.

4. Do not plant by trees, their roots can ruin your garden.

5. Remember to use good soil, dig up existing dirt and replace it.

6. Do not over plant

I will also be reading out of one of my fav books of the bible, which is Psalms and then doing additional reading from the Sunday services at church.

Banana Milk Shake

1/2 cup smooth peanut butter
3/4 cup milk
2 cups vanilla ice cream
1 banana

In a bowl beat the peanut butter and milk until smooth. In a blender, blend ice cream, and banana until smooth. Beat in peanut butter mixture until just combined. Serves 2 and 98 cents per serving!

Earth Day 2010

Earth Day is April 22, 2010. Let's all make an effort tomorrow to do atleast one earth friendly thing. My son's second grade class is working on the simple things we can all do such as recycle, turn off the water while brushing your teeth, park your car and walk to do errands. My kids use resuable lunch bags and that is one thing our household will be doing! Use your water bottle more than once. My husband is huge on always using a refillable coffee mug.
I found a site that is easy to navigate and will explain a little about earth day, the founder, it has a teacher's area for printables and ideas for the classroom, home schooling, things you can do with your children, etc.
All I can say it was pretty amazing hearing my 7 year old asking his 6 year old cousin at church on Sunday if she knew what a fossil fuel was! lol

Cookies-and-Cream Milk Shakes

5 Chocolate sandwich cookies (oreos)
2 cups vanilla ice cream
1/2 cup milk

Place 3 cookies in a ziplock bag, seal and crush. In a blender combine ice cream and milk. Blend until smooth. Add crushed cookies and pulse a few times to blend. Pour into 2 tall glasses. Garnish each with a cookie. You can also add whip cream and drizzle with chocolate syrup.

The cost per serving is only 95 cents!!

Peaches-n-Cream Milk Shake

1 10 oz. bag frozen peach slices, thawed slightly
1/2 cup milk
1 cup vanilla ice cream
2 Tbsp. maple syrup
1 tsp. vanilla extract

Blend peaches and milk in blender until peaches are in small pieces. Add ice cream, maple syrup and vanilla, blend until smooth. Pour into 2 glasses. (garnish with whip cream, if you like)

Prep time is 5 min.

Quick Meal Ideas

Open a can of tuna

For a weeknight dinner, stir drained tuna into macaroni and cheese or spoon it over hot pasta. You can dress up a salad by adding tuna to your favorite salad recipe. Make it a melt by scooping it on to an english muuffin half, top with cheddar, add tomato and lettuce if you like.

Spring Cleaning!

This is a topic and area that not many of us want to tackle! BUT...Angie and I find this is a must to address. We are having a garage sale (soon!) We have a 4 step method that will hopefully help and make this job easier. We are mostly talking about clutter. Get out 4 boxes, bags or containers and label them:
Trash
Give Away/Sell
Put Away
Storage

Trash - this should include any items you do not need or want. It might include broken items that are not able to be donated.

Give Away/Sell - This is where your garage sale items would come in. Be generous and think of items that other's can use.

Put Away - This should be your smallest category. These items may just be things laying around.

Storage - I know at our home, these might be seasonal clothing items. If other seasonal items, group like things together. Label your storage containers to make things easier next season.

Spring Break

Time does so fly by! As you have probably noticed, Angie and I are both on spring break with our families. She headed south with her family and they are having a blast in a cabin! I headed north, mainly to visit with hubby's family. We have been able to find some frugal things to do with the kids tho. Bowling has been real easy to find deals on. The place we went today had all you can bowl for 6.95 each! Then, the kids finally got to see Avatar at a movie theater that was $3 per person. We brought a deck of cards and coloring books and crayons, etc. We have enjoyed using the pool and hot tub at our hotel also. Hope you all are having a wonderful spring break!

Spiced Ice Tea

This is a delicious twist on your traditional sun tea. (It really makes your kitchen smell yummy too!)
The cost is about 45 cents per serving, 49 caleries and makes 8 servings.

Ingredients:
10 whole cloves
4 cinnamon sticks, broke in half
2 in. long strip of lemon zest
8 herbal tea bags
1/2 cup sugar

Wrap cloves, cinnamon and zest in a piece of rinsed cheesecloth, tie with kitchen string.

8 cups of water to boil in a pan. Add spice bundle and tea bags. Remove from heat, cover and steep 10 min.

Remove and discard spice bundle and tea bags. Stir in sugar, chill and serve over ice. Garnish with lemon slices, if desired.

Brown Sugar

Have you ever went to use your brown sugar and it is really, really hard? This is something that has happened to Angie and I...most recently when we had our granola baking experience! Do you have any tips to keep yours soft and ready to go when you need it? Please, please share with us and our readers.
I did see a few hints online and wonder if they work. One was to put the brown sugar in a container in the microwave with a bowl of water beside it. Microwave a minute and keep checking every 30 seconds after while being careful not to melt the sugar.
Another was to put a slice of bread in with the brown sugar in an airtight container to keep it soft. (I know this works with homemade cookies)

Applesause

Here is a great recipe for homemade applesauce.

Wash, peel and core 4lbs of apples
Chop into 1-inch pieces
Simmer apples, covered, in a large saucepan with 1/3 cup of water until apples are tender, about 15 min.
In small batches,place apples in blender with 1/4 cup of sugar and blend until smooth.
Place in plastic container and refrigerate.

*You can also place applesauce into ice cube trays and freeze for future use

Grace

We have been reading the book "What's So Amazing About Grace?" by Philip Yancey
This has been an ongoing book study for us on Wednesday night thru the month of March. Last week, I went over what grace is about. This week, I just want to touch briefly on what grace IS NOT!
Grace is not:

I hope that everyone discovers God's grace for you and the transforming power of that grace for your life and relationships.

Honey Barbecue Chicken Sandwiches

This recipe is really quick and easy if you keep cooked chicken in your freezer. This is great for those warm months coming up!

One package of angel hair coleslaw
1/3 cup coleslaw dressing
3 cups shredded chicken
6 tablespoons of honey barbecue sauce, whatever brand you have on hand
6 hamburger buns, toast in oven for 3 min.

Combine coleslaw and dressing in a bowl,let stand for 12 min.
Top bottom halve of each bun with 1/2 cup chicken, 1 tablespoon of barbecue sauce and 1/2cup of coleslaw.

Easy oh so good!

New Moon

For all of us waiting on the release of New Moon...the wait is almost over. The release date is March 20th. You can get a copy at your 24 hour Kroger location at midnight, Friday, March 19th. The ad states it will be $19.99 for a 2 disc special edition. On the special edition set, there is suppose to be a sneak peek of Eclipse!!

Spring is coming/get your garden ready!

We are for the first time, planting a small garden for our two familes to share.

I have been doing alot of research in prepreation and thought I would share with you how to start getting ready to plan your garden.

First is to go and get seeds. This is not the time to be too frugal, you want quality seeds. Next go buy seed starter planters and pick up seed startng potting soil. This soil has added nutrients to help the seeds grow.

As soon as you start seeing the plant grow, make sure to remove the plastic lid, this is important, as if you miss this step, your seeds will mold.

This month start with your colder weather vegetables, peas, radishs,leaf lettuce. If you decide to start your seeds in the ground, remember to cover them overnight. An old cotton sheet is great for this.

I will keep offering tips throughout our learning experience, so make sure you keep checking back in.

Apple Butter Pork Tenderloin

This is a very yummy different way to make your pork tenderloin. This is a meat that we buy frequently, as pork tenderloin goes on sale at Meijer fairly often for about $1.49 a lb.

1 pork tenderloin
salt and pepper
1/2 cup apple butter
1/4 cup brown sugar
1 tablespoon apple juice
1/4 teaspoon cinnamon
1/4 teaspoon ground cloves

Preheat oven to 350 degrees. Grease a shallow baking dish.
Place prepared pork in pan and sprinkle with salt and pepper. Combine remaining ingredients in a small bowl and spread over pork. Bake 35-45 minutes. Allow dish to rest 5-10 minutes before slicing. Serve drizzled with sauce from the pan.

Jello Mojito Granita

What you will need:
1 cup boiling water
2 Tbsp. lime juice
1 3 oz. pkg. jello, lime flavor
3/4 cup carbonated lemon lime beverage
1/4 cup rum or water
2 Tbsp. finely chopped fresh mint

Stir boiling water into gelatin mix, medium bowl until dissolved. Stir in remaining ingredients. Pour into 9 inch pan. Freeze 3 hours or until firm.
Spoon frozen mixture into large bowl. Beat with mixer on high until smooth. This looks really pretty garnished with a slice of lime or a sprig of mint.
Freeze any leftovers.

Easy Ways to Go Green

Green "to go" If you don't brew your coffee at home, take a travel mug to your fav java joint! They may fill your cup at a discount.
Running Errands, BYOB! Bags, that is!! It is becoming popular for retailers to pay you for using your bags.
Have a special basket or bin for paper you can recycle and use over at home! Scrap paper for the kids to write on is one use. Currently, we are donating our old newspaper to the art class at school for projects.
Buy refillable containers (spray bottles, for example), they can be refilled from larger jugs or concentrate. You can also make your own vinegar mixture for cleaning glass, removing soap or hard-water buildup on chrome fixtures.

What does organic really mean?

The U.S. Dept. of Agriculture has strict rules about what really constitutes organic food and can carry the label. Food must be produced without synthetic pesticides, fertilizers, antibiotics or growth hormones.
To clarify some labels you might be reading:
100 PERCENT ORGANIC All the ingredients in multi ingredient foods with this label are organic. This would be the same as the USDA organic label.
ORGANIC Products with this label contain atleast 95 percent organic ingredients. The remaining ingredients may not be available organic but approved by the USDA's National Organic Program.
MADE WITH ORGANIC INGREDIENTS Products that have this phrase on their label must contain at least 70 percent organic ingredients.

Frugal Friday

This recipe makes for a nice lunch or dinner. It is under $3 to make this as a lunch and you can prepare it as a dinner for a family of 5-6 for under $5. We call it Ramen Suprise at our house. It is a classic from my husband!
4-5 packs of chicken flavored ramen noodles
1 can of cream of mushroom soup
cheese for garnish
Cook ramen noodles in a large pot until most of the water has boiled off. Add can of cream of mushroom soup. Serve in soup mugs and garnish with your favorite shredded cheese. (We use mild cheddar)
This can easily be turned into a dinner also. Add a veggie, such as can of corn, peas or french style green beans. You can also add a 6 or 12 oz. can of chicken. (leftover chicken breast would work well) Top with cracker crumbs or cheese and enjoy!

Wise Words

I discovered this fall that my sister really loves the Chanel handbags! I mean, I was really shocked that she can spot one a mile away! lol I found this quote by Coco Chanel and wanted to post it:

Apple Crisp Recipe

This is one of my favorite desserts to make and serve. It looks like one that takes alot of time, but so simple and everyone like it!

Preheat oven to 350 degrees

What you need:

5-6 medium apples, peeled and sliced thinly

5 tablespoons of butter
1 cup brown sugar
1/2 cup instant oats
1 teaspoon ground cinnamon
1/2 teaspoon vanilla

Place peeled apples in a 8x8 pan

Combine all remaining ingredients in a bowl and mix. Pour mixture over apples and bake 25 min. . Best served warm with a scoop of vanilla ice cream!

How can I tell if my produce is organic?

When shopping at an everyday supermarket, it is sometimes very hard to tell if you are truly getting an organic product,here is the know....

PLU codes have been used since the early 1990's, these codes are used for bulk produce and other items such as nuts and herbs.

Look for the sticker on the produce, a PLU sticker with 4 digits means that it is not organic; a PLU sticker with 5 digits, beginning with the number 9 means it is organic!

I hope this helps as so many markets are trying harder to stock organic items!

Want to go Organic??

Try easing into it!!!!

I have a few tips that might help. For example, for foods, pick a product or two that excite you. Try those first. Pick something your kids eat the most of.
If you have a baby or toddler use organic diapers. Start buying organic baby food or dairy.
If you have a pet, consider pine, wheat or corn based liter instead of clay based.
Use a more natural sweetner. Buy local honey and try using it. It supports local farmers and the environment. My two fav ways to use honey is in a cup of hot tea and with biscuits! Yum!
Go organic when buying makeup or beauty treatments. It is good for your skin.
Try to avoid using plastic containers and cutlery. Anything made with plastic starts as oil and never degrades. (that is my lesson of the day, I was not aware of that fact)

National Strawberry Day 2/27

Did you know we have a National Strawberry Day? It is just 2 days away!

In honor of this special day, I have a great Strawberry Butter recipe that is easy and oh so delicious!

1 pint of Strawberries
Washed and stemmed
1 tablespoon lemon juice
3/4 cup honey

In a blender, whirl berries to a smooth consistency. Measure 2 cups into medium sauce pan. Add remaining ingredients and bring to a boil, simmer for 25 min., stirring occasionally. Cool. This is a pourable butter, so tasty on pancakes!

If your kids are anything like my daughter, you will be making this alot!

Grocery Time Saver

Try to write out your grocery list as to where things are located in your store. Frugal Friday

Our suggestion is to tune into the Olympics. You can find the complete schedule, info about the athletes, etc at www.vancouver2010.com
This is a great way to spend time with the family on Friday evening!!! Our house has been cheering on Shawn White. He took the Gold in the Half Pipe Snowboarding Event!! So far the United States has won 5 Gold, 4 Silver and 6 Bronze. The olympics only come around every 4 years, so this is something great to expose your children to.

Weekly Menu

Just running a little late this week getting our menu posted! We were so busy with the family for Valentine's Day. We ended up going to the mall and taking the kids shopping!
Breakfast:
cereal with bananas
french toast with warm syrup
homemade granola with yogurt
Sunday, eggs with sausage and toast
milk and assorted juices

Lunch:
Monday Salad and ramen noodles topped with cheese
Tuesday Leftover spaghetti
Wednesday Leftover chili
Thursday cheese toasties, apples with fruit dip
Rest of week PB& J, Healthy Choice frozen entrees

Dinner:
Monday Spaghetti, garlic bread
Tuesday Chili with crackers
Wednesday Baked Chicken, mashed potatoes, veggies
Thursday Pork Roast with carrots and potatoes
Friday Pizza (school function, so easy dinner)
Saturday Eating at Angie's, family birthday dinner
Sunday will be utilizing the oven making homemade mac & cheese (my daughter taking a large portion for dinner at church) Salad and fresh fruit

Fantasy Fudge

This is my recipe for Fantasy Fudge:

3 cups chocolate chips
14 oz. can sweetened condensed milk
1/2 tsp. of vanilla
optional: 1/2 cup nuts

Melt 3 cups chocolate chips with the condensed milk in heavy saucepan over low heat.
Stir pan constantly- Remove from heat- and add vanilla and nuts if you like.
Chill in wax paper lined 8 or 9 inch square pan

Note: For a Valentine's Day special dessert, you could chill on a red or white plate.
You could garnish around your plate with the nuts, M&M's, candy sprinkles, etc.
