Our Granola Baking Adventure

We had awesome reviews (from our families)on our first time making homemade granola. The recipe:
1 1/2 cups brown sugar
1/2 cup water
4 teaspoons pure vanilla
1 teaspoon salt
8 cups oats
2 cups nuts (if you care to add)
Pecans, walnuts, almonds

Oven 275 degrees
Combine brown sugar and water, Place in microwave for 5 minutes. Remove from microwave and add salt and vanilla.
In large bowl combine oats, brown sugar mixture..stir until mixed.
Spread on 2 cookie sheets and bake for 45 min to 1 hour. (until golden brown and crunchy)

Notes: If you wish to add dried fruit, do so when your granola comes out of the oven. We chose to add raisins to ours! This recipe yeilds 10 cups (a great value)and we also added cinnamon! Enjoy!!!

Frugal Cooking Tip Of The Week

FREEZE,FREEZE,FREEZE

No matter how careful we plan, there seems to always be leftover veggies after we eat. I would normally have thrown them away,no more. I keep a ziploc bag in the freezer and put all extra veggies in the bag. When the bag gets full, I take it out and make a hearty vegetable soup. Add veggies, 2 cups beef stock, and 4 cups water, and a can of tomato soup, salt and pepper to taste. You can also use chicken stock if you have that on hand.

Leftover meat? Chop it up and use in omelets, salads, or soups!

Make your own stock or broth using trimming's from meat. Remember to leave room for expansion when freezing.
