Honey Barbecue Chicken Sandwiches

This recipe is really quick and easy if you keep cooked chicken in your freezer. This is great for those warm months coming up!

One package of angel hair coleslaw
1/3 cup coleslaw dressing
3 cups shredded chicken
6 tablespoons of honey barbecue sauce, whatever brand you have on hand
6 hamburger buns, toast in oven for 3 min.

Combine coleslaw and dressing in a bowl,let stand for 12 min.
Top bottom halve of each bun with 1/2 cup chicken, 1 tablespoon of barbecue sauce and 1/2cup of coleslaw.

Easy oh so good!

Weekly Menu

Breakfasts:
Chocolate Chip Pancakes

Sunday: eggs, sausage
Apple and Orange Juice, Coffee

Lunches:
Friday: Leftovers
Saturday: Pizza Bagels or Buns (this is real easy...use whatever buns or bagels you have, add pizza sauce, cheese and fav toppings and bake)
Sunday: Home Vegetable Soup (using Angie's suggestion of putting leftover veggies from dinners in a big baggie for easy put together of the soup)
Monday: Chicken Salad on crackers
Tuesday thru Thursday: leftovers or deli sandwiches
Friday: lunch out

Dinners:
Friday: Pot roast, carrots and potatoes
Saturday: Dinner out
Sunday: Mexican Night...soft tacos with fixins, refried beans and spanish rice
Monday: Homemade chicken and noodles. succatash
Tuesday: Spaghetti with warm rolls
Wednesday: Steak, beef rice, green beans
Thursday: Breakfast for dinner, eggs, potatoes

Snacks:
celery sticks, radishes
popcorn, pretzels
fruit snacks
ice cream

New Moon

For all of us waiting on the release of New Moon...the wait is almost over. The release date is March 20th. You can get a copy at your 24 hour Kroger location at midnight, Friday, March 19th. The ad states it will be $19.99 for a 2 disc special edition. On the special edition set, there is suppose to be a sneak peek of Eclipse!!

Spring is coming/get your garden ready!

We are for the first time, planting a small garden for our two familes to share.

I have been doing alot of research in prepreation and thought I would share with you how to start getting ready to plan your garden.

First is to go and get seeds. This is not the time to be too frugal, you want quality seeds. Next go buy seed starter planters and pick up seed startng potting soil. This soil has added nutrients to help the seeds grow.

As soon as you start seeing the plant grow, make sure to remove the plastic lid, this is important, as if you miss this step, your seeds will mold.

This month start with your colder weather vegetables, peas, radishs,leaf lettuce. If you decide to start your seeds in the ground, remember to cover them overnight. An old cotton sheet is great for this.

I will keep offering tips throughout our learning experience, so make sure you keep checking back in.

We are reading the book: What's So Amazing About Grace? The author is Philip Yancy. We will be posting thru out the month of March each week on a small lesson or something we have learned through our studies and readings.

Apple Butter Pork Tenderloin

This is a very yummy different way to make your pork tenderloin. This is a meat that we buy frequently, as pork tenderloin goes on sale at Meijer fairly often for about $1.49 a lb.

1 pork tenderloin
salt and pepper
1/2 cup apple butter
1/4 cup brown sugar
1 tablespoon apple juice
1/4 teaspoon cinnamon
1/4 teaspoon ground cloves

Preheat oven to 350 degrees. Grease a shallow baking dish.
Place prepared pork in pan and sprinkle with salt and pepper. Combine remaining ingredients in a small bowl and spread over pork. Bake 35-45 minutes. Allow dish to rest 5-10 minutes before slicing. Serve drizzled with sauce from the pan.
