BEANS,BEANS,BEANS!!!

Here is a tasty dish.

BEAN AND RICE SALAD:
1 can kidney beans, drained and washed
2 cups cooked brown rice
2 tablespoons yellow onion minced
1 tablespoon celery minced
1 tablespoon carrots grated
2 teaspoons fresh parsley minced
1 tablespoon brown rice vinegar

Place all ingredients in a bowl an mix thoroughly. Serve

Frugal Friday

My youngest daughter keeps asking to go to the zoo! I am not even sure at 2 years old that she totally knows what the zoo is! But, I decided to bring the zoo to her. We went to our local library and got books on the zoo and several selections on penguins.
Using the library is a way to find that book you have been wanting to read and not actually pay for, checking out movies for a family movie night or getting video games for the kids to play.
So, my afternoon will be going to the zoo thru books and snacking on some delicious animal crackers!

Here is todays bean recipe!

Sweet and Tangy 3 Bean Salad

1can yellow wax beans
1 can kidney beans
1 can garbanzo beans

Dressing:
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 tablespoon olive oil
1/2 cup sugar
1/4 cup vinegar
1 small onion
2 cloves minced garlic

This recipe should be made 4 hours before serving for enhanced flavor.

Rinse all beans and drain.
In small pan saute onions and garlic until transparent. Add vinegar,sugar,and herbs. Mix until sugar is dissolved. Add beans and toss. Chill for 4 hours.

Healthify your cooking with canned beans! Just drain and rinse the beans to reduce their sodium by as much as 40%!!

BEANS,BEANS,BEANS!!!

Are you trying to cook under budget this week? We have one word BEANS! From burritos, to veggie burgers, to salads , beans are an ideal way to stay under budget. We will post one new recipes a day for the next several days . We think you will be suprised at how good these recipes are.

Remember to soak all beans overnight to release their gases!

Pinto Beans and Rice
1 pound dried pinto beans
6 cups of water
1 medium onion
1 teaspoon salt
1 clove garlic,minced
pepper to taste
16 ounces of diced tomato's
1 ham hock
4 cups cooked white rice

Combine water, ham,onions,and garlic, bring to boil then cover and cook for 35 min.. Add remaining ingredients and cook for 1 hour. Remove ham hock and shred ham and put back in pan. Serve over white rice.

Serves 6

FARMERS MARKET

Don't know about you but we are always looking for fresh, locally grown food. The West Chester Ohio Farmers Market will be open this Saturday,Jan. 30th from 2-4pm. The market is located in the parking lot across from Lakota West High School.

This is no ordinary market, along with fruits and veggies, you will find coffee, tea, muffins, cookies, snow cones, dips, and even rice!
